There are so many great songs from this era but lately I've been digging "One" by 3 Dog Night. I'd love to do a doomy cover of this song.

tons of good ones - hard to nail it down to one - here are some of my favorites - some well known and some obscure
Love - Alone Again Or
Love - A House Is Not A Motel
Beatles - In My Life
Beatles - Strawberry Fields Forever
Beach Boys - God Only Knows
Zombies - Maybe After He's Gone
Dave Clark Five - Anyway You Want It
Box Tops - The Letter
Hey Gallo - "One" would be an EXCELLENT doom cover !

Carnivore : Hey ever heard the butthole surfers version of hurdy gurdy man?
Butch: nice list, was just listening to the zombies the other day.
I would like to mention that James Brown is the godfather of funk and ranks high on the list 60's music.
